With 4th of July coming up, I wanted to share this Quick and Easy Summer Fruit Pizza Recipe which is a family favorite and is, without a doubt, what we always make for 4th of July. It is also one of my favorite recipes to make for baby showers and summer get-togethers and cookouts. For 4th of July, I just use strawberries, bananas, and blueberries to make the dessert look festive for the holiday but if you’re are making it for other reasons you can use any fruit you want to add—kiwi, apricots, mango, you name it!
Here is what you will need for this Quick and Easy Summer Fruit Pizza Recipe
INGREDIENTS:
1. Three Packages of Frozen Sugar Cookie Dough (I like to buy the packages that are already formed in cookies because it makes it easier to press them flat into the cookie sheet for the crust
2. 1 block of cream cheese, softened
3. 2 small package of Cool Whip
4. 1 cup of powdered sugar
5. 1 tsp vanilla
6. 3-4 cups of chopped fruit
First, spray and flour the bottom of a jelly roll pan. Set the sugar cookie dough out to soften for several hours then press it into the bottom of the jelly roll pan. Cook according to directions. You want to take it out when it is getting golden brown on the edges. Let cool.
While the sugar cookie crust is cooling, mix together in the — softened cream cheese, cool whip, vanilla, and powdered sugar. Mix until it is a whipped consistency.

Put the Cool Whip and Cream Cheese mixture in the fridge and chop up all your fruit.
Spread your Cool Whip mixture over the cooled sugar cookie crust.
Let your little helpers sprinkle the fruit on top.
Cut and serve immediately or if you need to refrigerate overnight, just do the crust and Cool Whip mixture then put the fruit on right before serving.
