So one night when we were very first married, Mike Miller wanted cookies.  I was out of butter and chocolate chips.  Not good.  So I did my best to come up with something that would please him—being the good wife that I am—and this was the result: Mike Miller’s favorite oatmeal cookies.  They don’t need chocolate chips or raisins.  They are that good.

Please excuse the terrible lighting but it was nighttime and my kiddos wanted to help so of course I had to snap a few pictures.  Emmy is our resident egg cracker.  Coco is our resident “boss everyone around and wait until the dough is done then enjoy the fruits of everyone else’s labor” guy.

Oh yes and before we go any further, I need to let you know that if you don’t have these three items – a Kitchen Aid mixer, Silpat (magic non-stick sheets for your cookie pans) and a cookie scoop, then your cookies stink.  Ok, they have butter and sugar in them, so they aren’t completely terrible, but let’s just say they aren’t as good as they COULD be.  Trust me.  You need these items if you want delish cookies.

Mix together 1 1/4 cup butter flavored Crisco (IT HAS TO BE THE BUTTER FLAVORED KIND), and 2 1/2 cups brown sugar.

In a separate bowl combine 3 1/4 cups flower, 2 tsp salt, 1 1/2 tsp baking soda and 1 1/2 cup oatmeal.  Stir all the ingredients together then add to the wet ingredients and combine.
