Let’s go ahead and be honest about the fact that it’s January and everyone is going to the gym and dieting like crazy. Am I right? I know I’ve been trying to make healthy choices and although I would be 100 percent happy to eat donuts and cinnamon rolls every morning for breakfast, unfortunately I can’t get away with that and my pants are screaming at me to do something drastic. So, I give you my quick and easy recipe for healthy baked oatmeal. This dish is not only healthy but it’s delicious; you can make it on Sunday and it will last for almost the whole week; and it feeds large groups of people. We had company this weekend so I made this baked oatmeal for everyone and it was a hit! Also, my kids refuse to eat oatmeal at all when I cook it on the stovetop, but they love this baked oatmeal for some reason.
The quick and easy recipe is below. Notice that I give you two options. You can use brown sugar, or, if you want the healthier sugar-free version, you can use honey and Splenda instead of sugar. A third option is to us 3/4 cup of organic maple syrup as your sweetening agent instead of brown sugar or honey/splenda. So there are lots of options depending on what level of healthy you want to make this recipe at. HA! Of course the brown sugar is the yummiest option but it’s delicious with the honey/splenda or organic maple syrup as well.
Here’s what you do.
1. Beat eggs
2. Add in honey and splenda (or brown sugar if you prefer to use sugar for sweetener), baking powder, salt, cinnamon, vanilla. Mix well. *OPTION: 1/2 cup of organic maple syrup can be used as your sweetening agent too. In regards to the sweetener, obviously it is best when cooked with brown sugar! But if you are going for the healthy version, use either the honey and Splenda combo, or, the 1/2 cup organic maple syrup as your sweetener
3. Add in milk and melted butter. Mix well.
4. Mix in oats.
5. Pour in a 9×13 pan
6. Bake at 350 degrees for 30-35 minutes
7. Cut in to squares and serve with fruit and drizzled honey on top. We also like to pour a bit of milk over the top of ours.
*FUN IDEA: Serve this up as a buffet with various fruit toppings, honey, syrup, granola, chocolate chips, coconut, brown sugar, and any other fun toppings you can think of.
