My sister gave me this enchilada recipe years ago and it’s one of my absolute faves. Yes they have goat cheese in them which sounds weird but just trust me on this one. They are absolutely amazing.
Reflections from the RV

So it turns out that 18 hours in an rv means plenty of time for blogging. I’ve had a lot of people ask me about our rv expeditions with our kiddos and if I would recommend it or not. Here’s the deal. If you are thinking about renting an RV or buying one and taking the fam on some cross country road trips: DO IT. You will undoubtedly make the most amazing family memories that you and your kids will look back on and remember for the rest of your lives.
I’m a mean mom.

I’m a mean mom and that’s perfectly fine with me. I’m not here to be my child’s best friend. It’s not my job to make their life easy or perfect or pain free. It’s my job to prepare them for life and then when the time comes, to let them go so they can live their life. I hope and pray that when the time comes for them to spread their wings and fly, they will be prepared for it. Part of that preparation for life means I have to be the mean mom sometimes.
little momma is halfway to sixteen {and I’m a total wreck about it}

I took little momma out for an impromptu 8 year old photo session for her birthday. Everyday I look at her and can’t believe she’s mine. I don’t deserve her… no seriously, I don’t. But I’m so thankful she’s mine. She’s the perfect blend of sweet but sassy. She cares about others more than herself. Her nickname perfectly suits her – little momma, because she’s always mothering. She takes care of her brothers, her friends, her dad, even me. She loves to give people back rubs. She loves to dance and sing. She loves to smile. She is the light of our lives and I thank God every day that he gave her to me.
