This is an oldie but a goodie. And by an oldie I mean that I grew up on this taco salad and it was always on my “best recipes that my mom made” list. You know what is REALLY awesome? When you become a mom yourself and realize that one of your favorite meals that your mom used to make is a super quick and easy recipe AND it’s always a crowd pleaser. I love to serve this taco salad as a main dish or take it as a side to a Mexican themed party. Now let me also say that this is one of those “dump everything in there” recipes that I have never used measurements for. I tried to write down some actual measurements so that I could tell you guys how to make it but basically what I am saying is, feel free to get more liberal with the cheese if you are a cheese fan and back off on the beans or leave them out if you don’t like them. Add some other ingredients if you like and if you like a lot of dressing rather than a little, add more. Just have fun with it and play around with it until you find the mix that is right for you. Also, I usually don’t ever measure this and I use a large bag of lettuce (from Sam’s) and an entire pound of hamburger meat. This is more than enough to feed a large group of 6 to 8 adults. So basically what I’m saying is if you want to feed a small family the recipe will be fine as written but if you want to feed more people you will need to double it.
- 1 large bag romaine lettuce or 1 large head of lettuce chopped
- 1 cup hamburger meat, cooked according to directions with a taco seasoning packet, then chilled
- 1 cup light red kidney beans, drained and rinsed
- 1/2 to 1 cup shredded cheddar cheese
- 1 cup lightly crushed Fritos
- 1/2 cup tomatoes, chopped optional topping
- 1 large avacado, sliced optional topping
- 1/4 cup black olives, drained optional topping
- sour cream to taste optional topping
- 1 1/2 to 2 cups Catalina dressing
